Coconut Ice/Coconut Balls are normally made during the Christmas season. This is a sweet that is very easy to make and looks very pretty especially in Christmas colors. I normally do not advocate the use of microwave cooking but have been trying out sweets in the micro and I must say I am blessed that they always turn out well. They save a lot of time without compromising the taste of the dish.
The first time I made these in the microwave was way back in 2018. One of the children in our group was getting married and I made a couple of dainty things for her hen’s party; the coconut balls being one of them. Everyone loved them.
Do give these a try. These get done in the micro between 2-1/2 to 3 minutes. Please note here that mine is a 1200-watt micro. The timing would depend upon the wattage of your micro.
Ingredients:
1-1/2 cups unsweetened desiccated coconut
½ to ¾ cup of condensed milk
1 tsp ghee or butter
½ tsp of cardamom powder
A few drops of liquid color
¼ cup or as required desiccated coconut for coating
Mini muffin cases (optional)
Method:
- In a microwave safe wide bowl add the desiccated coconut. Keep in microwave for 30 seconds, remove and stir and put back for another 30 seconds.
- Remove from microwave and add the condensed milk and ghee/butter and mix well. Next put back in the micro for 30 seconds, remove and stir.
- Continue this process until the mixture comes together. Mixture should be moist (not wet) and you should be able to form a ball. Take a small portion and try to form a ball with the mixture. If still wet put back in the microwave for further 30 seconds
- The entire process from start to finish took me 2-1/2 minutes in a 1200-watt micro
- Once ready, add the freshly ground cardamom powder and mix well.
- Divide the mixture into two portions and add a few drops of color to each portion and knead well.
- Form into balls when warm. Add the balls to a bowl of unsweetened coconut. Roll the balls in the desiccated coconut and remove on to a plate.
- When dry place them in mini muffin cases. This is optional. You can serve them as is.
- Store in an airtight container. These should be Ok outside for a few days depending on the weather. Else keep in the fridge. Should last for a couple of weeks in the fridge. I would recommend making smaller quantities given that these come together in a very short time.
Notes:
- I added ½ cup of condensed milk as I didn’t want them to be very sweet. You can add between ½ to ¾ cup of condensed milk
- I added a wee dash of ghee on my palms and then rolled the balls.
- Yield from above quantity: 14 balls
